Pomelo Paloma

Pomelo Paloma is a riff of the traditional Paloma, one of my favorites. I’m sure I wasn’t the first person to do this, but when I saw the pomelo at Eataly I knew I needed it (buy now, figure out what to do with it later). A little background, pomelo’s are the larger, less bitter cousin of the grapefruit. Their size is similar to a cantaloupe, making them the largest citrus fruit.

Paloma’s are traditionally made with grapefruit, so I knew the swap would compliment the other flavors and keep the integrity of the drink.

Recommended Glass: Rocks glass, I used something similar to these.

  • 2.5 oz of fresh pomelo juice (add pulp without the pith to a blender, blend and strain)

  • 2 oz tequila blanco

  • 2 oz freshly squeezed lime juice

  • garnish with Tajin rim and dehydrated lime wheel

Add all ingredients to a shaker with ice, shake. Rim glass with Tajin, add fresh ice, strain and serve.
